Dry-roast the masala ingredients and grind to a fine powder.

Heat oil, fry peanuts, mustard and curry leaves. Add onion, then brinjal and salt. Cook covered until soft.

Add tamarind, jaggery and 2–3 tbsp of masala. Cook 2 minutes.

Fold in the rice gently and serve warm.
