How to make Masala Puri

Cook peas
Pressure-cook peas with salt for 4 whistles until very soft.

Make the masala
Blend onion, tomato, herbs and a quarter of the peas. Cook the paste with spices, then add the rest of the peas and water.

Simmer to a thin, soupy masala.

Assemble
Crush puris in a plate, pour hot masala over, and top with chutneys, onion, carrot and sev.
