Evening snack recipes

These snack recipes are the ones made with evening tea: Maddur vade, nippattu, kodubale and mirchi bajji, plus the Bengaluru street chaats β€” masala puri, pani puri and churumuri.

Some are made fresh and eaten hot, like Mangalore bajji and onion bonda. Others, like nippattu, kodubale and rave chakli, keep for a week in an airtight tin, which makes them ideal for festivals and guests.

Tips for crisp snacks

Keep the oil at medium heat, rub hot oil into rice-flour doughs for crunch, and cool fried snacks on a rack rather than paper so they stay crisp. Most of these snack recipes are vegetarian.
